Does anyone have leads on where to find stuff to convert a 4x2 Scania/MAN into a Dakar Rally Raid truck with 4wd and increased suspension travel?

Now if Tamiya would release a kit!

RC Channel makes several aftermarket axles to replace Tamiya axles, including 4x4 types. They sell a 'Dakar' setup that includes axles and transmission here: http://www.rcchannel.com.tw/product_info.php?cPath=51&products_id=410
Be advised that all of their transmissions are one speed (although they include three different gears that will allow you to decide on what final ratio you want).
As far as trying to make a suspension with more articulation, remember that a Dakar truck does not have the jaw-dropping flexibility that a rock crawler does.
The Tamiya Mercedes delivery truck is a good start if you don't want to build your own rear box, but if you want to build your own, then the Tamiya Scania cab might be worth looking at.
There are also suitable stickers available that will make marking it a lot easier. https://www.ebay.com/p/RC-Dakar-Rock-Crawler-Stickers-Decals-Axial-Tamiya-HPI/1633148620

I always liked Dakar trucks and was never quite sure how to modify an existing Tamiya semi truck to one. (I've seen others do it, but felt it was beyond my skill set). Then I recently found this one and have ordered it. It's meant for a Tamiya road car chassis, but I have an old Axial SCX that I believe will work for it. https://www.ebay.com/itm/RALLY-LEGENDS-Iveco-Trakker-EVO2-1-12Body-For-1-10RC-Cars-Drift-Touring-EZRL2391/382142679679?hash=item58f97a8a7f:g:Eu4AAOSw8d5ZU3p Q

Saw on Facebook that Eagle/JD Models is coming out with a 1/14 Dakar rally truck. Contacted Tang and he confirmed. Should be released after the Chinese new year at around $800.
