How does the motor / driveshaft/ propeller go through the hull. I'm interested in doing a boat, but not sure how to go about the hull pass though part...

You can buy a shaft tube from a hobby shop or online. You can get them in various lengths too. It's just a tube with a plastic bushing at each end that the prop shaft passes through. Fill it with grease and your good to go!
