I guess that Wedico uses the Leimbach hydraulics, which are in general of good quality. A 345 size machine is pushing the limits of the capacity of the Leimbach equipment, but with things finetuned it should operate just fine.
Here are some more ideas;

* Check that the servos will open the valves maximum in both directions (may be adjusted by trim functions)

* Check for contaminant particles in the hydraulic system (filter and so on)

* If the oil level is a bit too low, there can come air in the system, that may slow things down

Is all of the oil the original? If you by any chance have have added some thicker oil into it, that may result in more slow operation.

Factory new hydraulic may in some case have some small metal contaminants left from the production process, that have not been fully removed. If just a tiny-tiny item gets stuck e.g. in the pressure relief valve, one may never get a good pressure build-up. This valve is a part of the pump, and one needs a manometer hooked up when to reinstall it again, to get the correct pressure setting.

I had also some issues with my hydraulic. The center valve body was moving only at normal speed in on direction and after a couple of seconds in they other direction. I found small debris in the valve and the valve rod.

How much pressure is in the system?
